This Healing Soup Is Really Special!

This is my go-to vegan soup for the soul. I’ve witnessed it do some magical things to both my kids, friends, and family.  Plus it’s tasty and can be enjoyed smooth or chunky. 

I’ve found that younger kids prefer it smooth, while teenagers and adults prefer it chunky. 

It can be enjoyed at any time in the year. But it’s especially enjoyable at the change of the seasons. 

Ingredients

HIPPOCRATES SOUP

  • Celery 1 stalk
  • Parsley ½ bunch
  • Leek 1
  • Large tomato 1

  • Onion ½
  • Large potato 1
  • Clove garlic 1      

Cooking Method

Step 1

Finely dice garlic and parsley

Step 2

Chop all vegetables and place them in a large pot 

Step 3

Cover with water 

Step 4

Place lid on pot, to keep goodness in

Step 5

Simmer on a low heat for 1 hour      

Step 6

Enjoy chunky, or let cool and make smooth in your blender

What It’s Good For

Celery

An excellent source of vitamin K, folate, potassium, and fibre.

Onion

A chemical called quercetin in onions may have anti-cancer properties.

Parsley

Parsley is a great detox herb that’s known for improving bladder and kidney health. Filled with antioxidants and vitamin k, parsley is an important part of this recipe.

White Potato

Potatoes are filled with fiber, potassium, vitamin C, and vitamin B6. Some studies show that potatoes are great for your good gut bacteria. They’re also extremely filling.

Leek

Leeks are rich in flavonoids, known to be health-promoting. As well as being filled with antioxidants, and vitamins A, C, and K (important for helping your blood to clot).

Garlic

Garlic is often used to fight a cold or flu, and should be seen as more of a medicine than a food. Throughout history, we’ve used garlic to heal. In fact, one study found that one garlic supplement a day cut the chances of catching a cold by 63%.

Tomato

The bright red color of tomatoes is due to their lycopene content. An antioxidant that can protect you from the sun, improve heart health, and some studies have shown that tomatoes may have cancer-fighting properties.
